Kariki cheese is a rare and unique blue cheese from Tinos, Greece. It is made using fresh cheese, known as “petroma,” which is aged inside dried, hollowed-out pumpkins called “karikia.”The cheese is sealed inside the pumpkin and left to mature for about six months, allowing natural blue mold to develop.It has a strong, pungent, salty taste, similar to Roquefort or Stilton, with a creamy yet crumbly texture.Enjoyed as a meze with bread, nuts, and honey, paired with red wine, ouzo, or tsipouro.
