The meat is lean but has a good amount of marbling, which provides moisture and flavor as it melts. Jamón Serrano is traditionally sliced by hand using a long, sharp knife. Thin, almost translucent slices are preferred to ensure the right balance of flavor and texture. The bone-in version requires skill to slice properly, as the bone adds complexity to the cutting process.
