Jamón Bellota 100% Ibérico, bone-in, is one of the most prized and luxurious types of cured ham in the world. It comes from purebred Ibérico pigs that are raised in the Spanish dehesas (pasturelands), where they roam freely and feed primarily on acorns (bellotas) during the montanera season, which is the last 3-4 months of their life.Only 100% purebred Ibérico pigs are used for this type of jamón. It has a complex and rich taste, with nutty, buttery flavors that come from the acorn diet, and a melt-in-the-mouth texture due to the high level of intramuscular fat. The marbling also helps maintain the ham’s tenderness and juiciness.
