Idiazábal is a traditional cheese from the Basque Country and Navarre, made from raw milk of Latxa and Carranzana sheep breeds. Often lightly smoked and naturally matured, this cheese has a firm texture and a bold, subtly smoky flavor that reflects the rugged, mountainous landscape of its origin.
