Cabrales PDO is the most renowned blue cheese of Spain, originating from the mountainous region of Cabrales in Asturias (northwest Spain). It is made using traditional, artisanal methods and matures naturally in limestone caves, where humidity and temperature are ideal. Made from raw cow’s milk or a blend with sheep and goat milk, it offers remarkable depth and complexity of flavor. Its paste ranges from ivory to straw-yellow, with brownish edges and irregular blue-green veining from Penicillium roqueforti mold. The texture is complex: soft and creamy, yet slightly grainy and crumbly. The flavor is intense, tangy, and salty, with a long-lasting finish and a strong, pungent aroma.
