Manchego is Spain’s most famous cheese, protected by a PDO (Protected Designation of Origin) and internationally recognized for its unique identity. What makes it exceptional is the exclusive use of milk from Manchega sheep, a native breed that grazes on the arid plains of Castilla-La Mancha. Their milk gives Manchego its semi-firm texture, nutty notes, and sweet, well-balanced flavor. Its distinctive rind features a herringbone pattern, a legacy of traditional esparto grass molds still used in artisanal cheesemaking. Available aged 6 months for a bold and slightly spicy flavor, and 12 months for an even more pronounced, refined character.
