Description
Roncal is a traditional cheese made from raw sheep’s milk in the mountainous Roncal Valley in the Pyrenees of Navarre, northern Spain. It is made exclusively with milk from the Latxa breed and matured in the natural mountain climate, resulting in a firm texture, natural rind with traces of mold, and a bold, slightly spicy flavor. Roncal was the first Spanish cheese to be awarded PDO status, in 1981. Its production follows strict quality standards and fully artisanal techniques passed down through generations, preserving the authenticity and tradition of the region.
