Butterfly Anchovy fillet in EVOO

Ortiz’s anchovies (salted anchovies) – two fillets joined by the tail of the fish – are carefully selected and salted for a minimum period of six months. Once they reach the best ripening point, they are filleted by hand and then packed in olive oil. It is of high nutritional value with solid flesh and rich taste.

Anchovy is a migratory fish and travels thousands of kilometers throughout its life in search of food. At Conservas Ortiz they fish anchovies from the Cantabrian Sea. Large anchovies with a fleshy and firm texture, packed in olive oil. Salted anchovies (anchovies) have solid flesh and a strong flavor. Ideal appetizer for discerning palates.
