The process is long and demanding. Kaviari imposes strict quality standards on its partner farms. Despite growing into an internationally recognized house, it remains a small-scale, independent operation. Its artisanal methods, inherited from skilled Iranian masters, are preserved to ensure optimal ripening and production.
Creating the ideal ecosystem, selecting the right sturgeon, and waiting years for the roe to mature are key. Once mature, the roe is carefully harvested and processed by hand using precise techniques, ensuring top-tier quality. Kaviari enforces rigorous specifications related to water quality, feeding, natural maturation, and hygiene to protect the fish and preserve the quality of the final product.

Caviar should be served neither too cold nor too warm. Remove it from the container about 10 minutes before serving.
